Bulletin boards
I created brief education display about Omega-3 fatty acids for the bulletin board in the outpatient nutrition counseling room.
The Nutrition Therapy department is responsible for one of the bulletin boards in the physicians' lounge at the hospital. I research the topic of albumin and its role in nutrition assessments and in diagnosing malnutrition. This topic was chose because some doctors place too much emphasis on the lab value for albumin when assessing inadequate nutrition or nutrition support. Recent research indicates the albumin is more influenced by inflammation and illness than nutrition status or protein intake.

Nutrition instruction in MNT
While in the sports nutrition rotation, the sports RD and I met with a college basketball athlete with gastroparesis. The athlete provided us with food log that she kept for a few days and we discussed diet/lifestyle recommendations. I researched MNT for gastroparesis, reviewed the food log provided, and listed suggestions for this athlete.

Patients with diabetes who attend a three-class series on diet and weight management are asked to keep a food log and turn it in to the dietitian. I reviewed the food logs provided and wrote down comments about their food choices/amounts. Below are a couple samples of the comments that I made in response the three different participants' food logs.

Community nutrition/health talks
During my elective rotation with corporate wellness, I presented a lunch & learn presentation to a local company. I received very positive feedback from the employees and the wellness clinician about my presentation.

Sample of one nutrition education that was provided to a patient of a different background
During my clinical rotation I provided in-patient nutrition education to individuals of diverse backgrounds. I had the opportunity to collaborate with an interpreter to provide education to a Hispanic gentlemen who only spoke Spanish. I adapted the standard discussion outline to best meet the needs of this individual and allow for simple translation. I learned to speak 1-2 sentences at a time and then pause for the interpreter. In order to work effectively with an interpreter, there are a few important things to keep in mind. First of all, when having a discussion, speak directly to the patient and not to the interpreter. Speak more slowly, at an even pace, and in short segments. Remember that the interpreter is the medium, not the source, of the message. If you feel you are not getting the right type of response from the patient or family member, try restating the question or consult with the interpreter for clarification. Avoid highly idiomatic speech or complicated sentence structure and recognize that not all words have a direct translation. Above all, be patient and respectful.
Menu based on established criteria
This menu is based on the guidelines for a "Wellness Meal" according to the Partnership for a Healthier America.
The main criteria are: less than 700 calories less than 10% calories from saturated fat 0 gram trans fat Less than 800 mg sodium Each meal must include: 2 oz. meat/poultry/fish or alternative 2 oz. whole grain rich grain 3/4 cup fruit 3/4 cup vegetable 1 cup low-fat dairy or equivalent |

Theme meal project
For this theme meal, I choose the menu items, placed an order for the needed items, determined the selling price, and prepared each item. The HACCP report and the Production report were generated through the Sodexo software and were useful for recording temperatures and quantity served during the meal.
